Ingredients
Method
- Mix the dough. Add the sourdough starter, warm milk, melted butter, honey, flour, and salt to the bowl of a stand mixer fitted with the dough hook. Mix on low speed until the ingredients come together. Knead on speed 2 for 8–10 minutes, until the dough is smooth and elastic and begins to pull away from the sides of the bowl.
- Let the dough rise. Cover the bowl and let the dough rise at room temperature until noticeably puffy and nearly doubled in size, about 6–10 hours, depending on your starter and kitchen temperature.
- Shape the rolls. Turn the dough onto a lightly floured surface and divide it into 12 equal pieces. Shape each piece into a smooth ball by tucking the edges underneath and gently rolling it against the work surface. Arrange the rolls in a greased 9 × 13-inch baking dish.
- Let the rolls rise again. Cover the baking dish and let the rolls rise for about 1–2 hours, or until puffy and nearly touching. They should look noticeably fuller before baking.
- Bake. Preheat the oven to 375°F (190°C). Whisk the egg with 1 tablespoon of water to make an egg wash. Gently brush the tops of the rolls, then bake for 30–35 minutes, until golden brown on top and cooked through.
- Finish and serve. Brush the warm rolls with melted butter and bit of flaky salt, if desired. Serve warm alongside your favorite family dinner.
