Servings: 4

Ingredients

  • 1 package kielbasa sliced into rounds
  • 1–2 tablespoons olive oil divided
  • 1 medium onion chopped
  • 2 bell pepper cut into bite-sized pieces
  • 1 cup homemade barbecue sauce
  • 1 tablespoons brown sugar
  • 1 tablespoon water
  • 3 garlic cloves minced
  • Pinch of red pepper flakes to taste
  • Black pepper to taste

Method

  1. Brown the kielbasa. Heat a drizzle of olive oil in a large skillet over medium heat. Add the sliced kielbasa and sauté until deeply golden and crispy around the edges. This adds texture to the sausage and builds flavor in the skillet for the sauce. Transfer to a plate.
  2. Cook the onion. Add a little more olive oil to the skillet if needed. Add the chopped onion and sauté for about 5 minutes, until softened.
  3. Add the bell pepper. Stir in the bell pepper and garlic cook for another 3–5 minutes, until beginning to soften.
  4. Make the barbecue sauce. Add the barbecue sauce, brown sugar, water, red pepper flakes, and black pepper. Stir to combine.
  5. Simmer. Return the kielbasa to the skillet. Bring the sauce to a gentle simmer and cook for 2–3 minutes, stirring until the sauce thickens slightly and coats the sausage and vegetables.
  6. Serve. Serve warm over rice or pasta, or alongside crusty sourdough bread.

Notes

  • Barbecue sauce: If your sauce is already sweet, reduce the brown sugar to taste.
  • Double: Super easy to double this recipe to feed more people or have leftovers the next day.
  • Vegetables: Use a red, yellow, or green bell pepper, depending on your preference.
  • Spice: Adjust the red pepper flakes or leave them out entirely.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days.
  • Freezing: Freeze cooled portions for up to 3 months for best quality. Thaw in the refrigerator before reheating.
